- 3-4 baked and shredded chicken breasts
- 1 cup salsa
- 1 small red or sweet onion
- 1 tsp cumin
- 1/2 tsp dried oregano
- 1 jalapeno with seeds (optional... if you want some spice)
- 8-10 tortillas warmed
- 1 can black beans, drained and rinsed
- 2 cups shredded cheese
Preheat oven to 375 degrees.
In skillet, simmer first 5 (or 6 with jalapeno) ingredients until heated through and most of the liquid evaporates.
If you're using the raw tortillas, cook them until slightly brown before filling.
Place about 1/2 cup chicken mixture down the center of the tortilla; top with about 1-2 Tbs of black beans and shredded cheese. Fold sides and then ends over to cover filling.
Place seam face down on slightly coated with cooking spray 13x9x2 baking dish.
Bake, uncovered, for 15 minutes.
