Enjoy this delicious pork tenderloin with yummy homemade sweet potato biscuits and top it all with melt in your mouth apple chutney! Talk about a yummy comfort food meal. This will make you want to sit next to a warm fire and read a book after dinner. I made this a few days ago and it was so simple and soooo delicious smelling. When the rosemary is cooking with the pork tenderloin it filled my house with such a delicious smell. It felt like fall had finally arrived. My house smelled even better when I made the apple chutney to top the pork tenderloin. I think adding a cinnamon stick to most things will only improve circumstances and thankfully the apple chutney recipe calls for one! This recipe does have three parts so you will want to plan ahead. Start with baking the sweet potato. Cover the sweet potato with olive oil, use a fork to put some holes in it and then wrap in foil and bake in the oven until squishy. Make sure you let the sweet potato cool before you mash or else you will get burned! You could bake the sweet potato a day or two ahead of time. I like to bake sweet potato like this often. I’ll bake several and then store them in the fridge and pull them out as needed. I typically like to just eat them as is, warmed up with a little bit of butter. This easy breakfast nacho recipe makes every bite delicious! My inspiration was to add everything I love in a breakfast burrito but to eat it on tortilla chips! YUM! Ever since living in NM I have loved finding the best breakfast burritos wherever I go. When I went to grad school in a little town called Socorro, they had a place called Burrito Time and they served the best breakfast burrito ever. Not only were they cheap, we are talking $3 or less, they were fast, seriously delicious and the burritos were huge. Perfect for a poor college student! To make these nachos I pretty much took what I loved from their breakfast burritos and piled it on top of tortilla chips. And you know what? It was sooooo good. Like, I want these all the time good! To make these breakfast nachos, it’s as easy as frying up some bacon, cooking some potatoes, making some scrambled eggs and then combining everything on top of delicious tortilla chips. You can fry up some jalapeno, but that’s totally optional and only for those who like a spicy addition to their breakfast. Then I add diced tomato, shredded cheese, and top everything off with one of my favorite store-bought salsas (you can totally make your own though!). I love the Herdez Green Salsa and will eat it on anything and everything! Ok well, maybe not dessert! But it really adds the perfect final touch to these breakfast nachos! These are some of the best oatmeal cookies I have ever had! They smell amazing when cooking, they are amazingly soft and chewy when fresh from the oven, and they are super easy to make! Growing up I was never a fan of oatmeal raisin cookies. I always thought- why raisins and why not chocolate chips! Let’s be honest, I still think this way most of the time! I think I didn’t like them when I was little is because I would be expecting chocolate and then get a raisin. Let’s be honest, when you expect chocolate, anything else doesn’t satisfy. Well, I’ve made and eaten lots of oatmeal chocolate chip cookies, but I have also come around to enjoying these soft oatmeal raisin cookies because when I make them I know to expect raisins These easy oatmeal raisin cookies are super quick to mix together and will be gobbled up even faster! Simply cream the wet ingredients in a mixer and while those are creaming, mix together the dry ingredients. Then add the dry to the wet and mix. Finally, mix in the oatmeal and raisins and bake! The glaze isn’t necessary but takes the cookies to the next level. So, if you have powdered sugar and a little milk make it! You won’t regret it. While the cookies are baking, combine the glaze ingredients. I like to use almond extract in the glaze because I love the flavor, but feel free to use vanilla or omit the extract all together! Alright, who is ready for a recipe for scones made with buttermilk? These are the best buttermilk scones and they are bursting with fresh orange flavor and yummy chocolate chips. These scones are so delicious! Even if you skipped the orange and chocolate they are still super soft and yummy! The buttermilk makes the scones light and fluffy and gives it a delicious depth of flavor! Oh, and these scones are super easy to make. You really can’t go wrong with them! First mix together the dry ingredients, then cut in the butter. Add in the wet ingredients and then the chocolate chips. Brush with some leftover buttermilk and sprinkle with a little sugar. Bake, glaze and now you are done. You now have a dozen, soft and amazingly delicious scones! Scones made with buttermilk are seriously some of the most delicious scones I have ever had. If you don’t believe me, give them a try! I couldn’t stop snacking on these and had to promptly think of who I could share them with so I wouldn’t eat them all! So, make these and make not only yourself happy but others too. Sharing is a wonderful thing. These scones are quick to make and are perfect any time of the day, but making them early and then sitting down with some hot tea, cocoa or coffee, and a light, sweet scone sounds perfect. This blueberry coffee cake recipe is hands down one of the best coffee cakes ever! My husband loves it and I took it to a family get together and everyone there loved it too! And did I mention it is super easy to make? Who doesn’t love a good coffee cake? When I was little I thought coffee cake would taste like coffee- which to my young mind meant bitter! But once I was enlightened to what coffee cake really was, I was hooked! When whipping this up, I made sure to gently fold in the blueberries. That way they won’t break prior to baking and turn the whole batter grey. But hey, if that accidentally happens it will still be delicious, just maybe a slightly different color. No one will care as soon as they taste it! This easy blueberry coffee cake is made with bisquick- because bisquick makes everything easy and always turns out exactly how I wanted it to. So that is a winner in my book. I also made this recipe to have a lot of streusel- you know that sugary crumbly topping that everyone loves. So yeah, I made a ton of it and happily put it on top. No regrets! And if the yummy streusel wasn’t enough (which it totally is!), I made a quick almond glaze!
