Delicious and packed with nutrition?!?! Absolutely possible and just happened with this Morning Glory Muffin recipe. Once you’ve recovered from DYING over these unbelievable Morning Glory Muffins, come try my Banana Muffins (super popular right now) and my Pear Apple Muffins.  Warning: I will feel no regret for facilitating your muffin addiction. A friend emailed me recently with a recipe for ‘healthy’ Morning Glory Muffins.  She wanted my opinion on whether or not the recipe was actually healthy.  Oh. my.  They were made with 1 and 1/2 cups sugar, vegetable oil, and white flour.  Ugh… definitely not healthy.  Just because morning glory muffins have carrots and apples thrown in does not automatically make them healthy. When I create healthy recipes, I think about each ingredient added.  I play around with naturally sweet foods like apples, bananas, and of course pure honey or maple syrup instead of adding sugar.  I choose oils with rockin’ benefits like coconut and olive oil.  White flour?  Forget about it.  Once you try whole wheat pastry flour, you’ll kiss white flour forever goodbye. Chicken Teriyaki Stir Fry

Look.  There are several nights I’m scrambling to figure out what I’m going to make for dinner.  The day got busy, dinner time comes speeding up, and need something quick because people are starting to salivate (hungry tummies bring lots of grumpiness in my house).  Am I alone?  I’ll give you a couple tips so you can have all the ingredients to throw something together like this juicy and savory Chicken Teriyaki Stir Fry.         There are some constants when you look in my freezer and refrigerator… a large bag of organic carrots, sweet onions (refrigerate to last longer), frozen organic sweet corn, frozen organic sweet baby peas, and frozen organic broccoli florets.   HIGHLY  recommend you adding them on your shopping list (I purchase mine from Costco).  When you’re in a rush, I have several quick and healthy recipes that will use at least one like my Chicken and Broccoli Pasta, Classic Spaghetti, or my Not-Yo-Mama’s Shepard’s Pie.     I got spoiled when living in Hong Kong and Taiwan.  The food is incredible… especially the rice, fresh fruits and vegetables.  Oh, how I miss it!  You wouldn’t think the rice would be so much different in the States, but rice is definitely not created equal.  I’ve tried lots of brands but love love Lundberg Farms Brown Rice.  It reminds me of rice from Taiwan.  Keep rice in a large airtight container which makes it handy to make recipes like this rice stir fry and my Yellow Chicken Coconut Curry.     Teriyaki sauce is also something not created equal.  Read the ingredients!  Whenever purchasing something prepackaged, read the...

Creamy Chicken Noodle Soup

I’m not sure where you live, but our Utah weather is crazy.  Last week, we had a foot of snow dump in the morning and by the afternoon it was melted.  Since Utah can’t decide whether it’s winter or spring, I’m taking advantage of these last few cold days by spoiling myself with this creamy chicken noodle soup.  I made it again tonight and literally want to drink the broth from a glass.  It’s creamy, comforting, and heavenly.  Am I the only one who consumed over soup recipes during cold weather?       I’m a big believer in tweaking recipes to make them healthier.  If you can’t taste a difference, why not make it healthier?  Creamy soups 90% of the time call for heavy whipping cream.  There are two types of fats: ones that cause health issues and ones that fight health issues.  Heavy whipping cream is a low nutrition, artery-clogging fat which nominates it as a bad fat.  Coconut milk’s fatty acids, on the other hand, aid in weight loss, lower cholesterol, reduce heart disease, improve skin and hair… blah, blah, blah.  You get the picture.  You won’t be able to taste a difference, but your body will thank you for substituting heavy whipping cream with coconut milk.   If you want to try out coconut milk in a couple more recipes, check out my Healthy Olive Garden Zuppa Toscana or my Yellow Coconut Chicken Curry. You won’t regret it.       I don’t purchase everything organic because it can start getting pretty pricey.  However, there are some things that must be an organic purchase.  Carrots are one of them.  I was...

Sweet Potato Shepard’s Pie

“Mom, what’s for dinner?  Honey, what’s for dinner?  Self, what are we going to have for dinner?!?!”  On some days, this question can feel like a 50 lbs bag of stress.  Hopefully by now, you know I get you.  Although I love cooking (mostly eating), somedays I’m too tired and just don’t want to cook.  Take a deep breath with me and get ready for this ridiculously gorgeous, this-is-2015 healthy Shepard’s Pie casserole.  Pst… you can even double the batch and freeze one to eat on another crazy, busy, hectic day.     I have a problem.  I’m seriously addicted.  I love LOVE the bright, beautiful colors and flavors of vegetables.   Especially organic vegetables.  I know, I know, I’ve mentioned it before but I can totally taste the difference.  I was instantly converted when I had a horrible, chemical aftertaste when eating a carrot one day.  I only buy organic carrots from now on.   Costco makes it pretty easy to have large bags of frozen organic vegetables on hand.  Next trip, just stock up on organic frozen peas, frozen sweet corn, and a large bag of organic carrots.  I have plenty of go-to recipes that call for these tasty veggies.  Stick with me and I promise they won’t go to waste.       Just to make it even easier for you, here are ingredients I use.  My kitchen would feel naked without my large container of spices.  They last a long time (and store great) even though I’m using them constantly.  Spices punch out the natural flavors of the vegetables.  And it’s a much healthier option than to throw...

I have several go-to, under-30-minutes healthy and delicious dinner recipes.  This fabulous Chicken Tortellini Soup definitely makes the cut along with my Baked Burritos, Stuffed Zucchini, and Simple Turkey Chili.  My talented friend, Erin, inspired this recipe.  She made a similar soup for us once, and my family fell in love with it!  Be prepared to have your family instantly hooked too!       I recently was fully converted to organic carrots.  I was snacking on a raw carrot until I realized my tongue start tingling along with a horrible aftertaste.  Pesticides?  Chemicals?  Who knows… but it was disgusting.  I only purchase organic carrots now.  They have been surprisingly cheap too!  I get a 2 lb bag for under $2.  No more tingling tongue.   Also, I’m a huge advocate for washing your vegetables.  Are you one to just rinse them under water and think you’re good?  Well, read this post where you can visibly see the difference between rinsing and washing.  I’ve tried numerous of washing methods and keep coming back to Fit: Vegetable Wash.  I’ve only been able to find it on Amazon or at Walmart.  I dilute it 50:50 with water and use it on everything without a thick skin or peel that’s not edible (bananas, avocados, etc.).  Completely worth the investment.  You’ll never be able to eat grapes without it again.     Don’t you love the vibrant colors of this soup?  Huge fan of recipes with several different natural colors.  Not only is it nice on the eyes, but also nice to your stomach and body.  Enjoy your quick, easy chicken tortellini soup.  Let me...
