My mother-in-law is Hispanic, and my husband grew up on some AMAZING homemade Mexican food (you still have so much to teach me, Julia!).  Mexican food is, of course, my husband’s favorite type of food… can you blame him?  So, I experiment and create several different healthy and savory Mexican dishes just because I love my man.    Guacamole is definitely a favorite here at the No Diets Allowed household ESPECIALLY during football season.  Roll Tide!  I love my quick, 3 ingredient Simple Guacamole.  However, this past Saturday I wanted some creamier with crispy and juicy vegetables.  AND this Creamy Guacamole was born.  This will definitely become a regular dish!     Print Creamy Guacamole Ingredients 2 large ripe avocados mashed 1/2 cup Greek plain yogurt 1 green bell pepper coarsely chopped 1/4 cup sweet onion coarsely chopped 1/4 cup cilantro coarsely chopped 1 Tbs lime juice 1/4 tsp salt 1/4 tsp pepper 2 large Roma tomatoes diced Instructions In a medium-sized bowl, combine all ingredients EXCEPT for tomatoes. Stir well until creamy. Fold in diced tomatoes. Chill for at least 2 hours. Serve with your favorite chips! This is the perfect post-workout smoothie.  It’s packed with protein, healthy carbs, anti-oxidants, healthy fats, and is super creamy and sweet.  You could even throw in some kale or spinach to make it even that much more power packed!   Print Power Protein Smoothie Ingredients 1 cup coconut or almond milk 1 scoop vanilla whey or vegan protein powder 1 cup fresh pineapple chunks 1 medium banana peeled 1 cup watermelon chunks 1 Bartlett pear washed and cut in half (keep seeds and core for extra nutrients) 1/2 avocado pit and skin removed 1/2 yellow summer squash 2 cups ice or tropical frozen fruit Instructions Add all ingredients into Vitamix blender in order listed. Blend on high for 30 to 45 seconds until smooth. All Green Smoothie

Although I know the green color can be a little scary, endless blessings come from this power drink.  It’s enjoyable and sweet even though you’re eating tons of veggies, fiber, several vitamins and nutrients, and a nice energy boost for the day. My husband was hesitant when checking out the green color.  He slowly took a sip, looked surprised, and said, “this is really good, babe!” He was hesitant no more and the smoothie was history.     There are lots a fresh veggies and fruits in this smoothie.  PLEASE, I’m seriously begging, wash (not rinse with water) all of them.  You completely void all the good if you’re putting in all those chemicals, dirt, pesticides, and waxes they accrue before coming home with you.  Don’t know how to wash your vegetables or why it’s important?  Check out this post on why you should wash your vegetables.  You can visible see the difference in the images I share.   If you feel this smoothie is too sweet or tart, add a scoop of vanilla protein powder or a banana. Both or one of these will add a subtle sweetness.  Sit back, smile, and enjoy your smoothie while your stomach and body thank you for all the nutritional goodness. Print The Classic Cobb Salad This veggie and protein packed salad is a perfect post-workout lunch. Ingredients 1 large Romaine lettuce leaf washed and chopped 1 large Red lettuce leaf washed and chopped 1/2 cup frozen sweet corn rinsed with warm water 1/2 cup black beans drained and rinsed well 1 cup cherry tomatoes washed and cut in half 1/2 large avocado sliced 1 large egg hard broiled and sliced (optional) 2 medium green onions chopped (optional) 2 Tbs balsamic vinegar 2 Tbs olive oil 1 Tbs fresh lime juice Instructions On a large plate, evenly distribute chopped lettuce across plate. Layer the corn, black beans, tomatoes, avocado, egg, and green onions as pictured or toss ingredients together and spoon over lettuce. Mix together balsamic vinegar, oil, and lime juice.
