This easy breakfast nacho recipe makes every bite delicious! My inspiration was to add everything I love in a breakfast burrito but to eat it on tortilla chips! YUM! Ever since living in NM I have loved finding the best breakfast burritos wherever I go. When I went to grad school in a little town called Socorro, they had a place called Burrito Time and they served the best breakfast burrito ever. Not only were they cheap, we are talking $3 or less, they were fast, seriously delicious and the burritos were huge. Perfect for a poor college student! To make these nachos I pretty much took what I loved from their breakfast burritos and piled it on top of tortilla chips. And you know what? It was sooooo good. Like, I want these all the time good! To make these breakfast nachos, it’s as easy as frying up some bacon, cooking some potatoes, making some scrambled eggs and then combining everything on top of delicious tortilla chips. You can fry up some jalapeno, but that’s totally optional and only for those who like a spicy addition to their breakfast. Then I add diced tomato, shredded cheese, and top everything off with one of my favorite store-bought salsas (you can totally make your own though!). I love the Herdez Green Salsa and will eat it on anything and everything! Ok well, maybe not dessert!  But it really adds the perfect final touch to these breakfast nachos! Who says gingerbread is only for Christmas? Not me! Did you know gingerbread goes really well with strawberries and vanilla pudding AND cool whip? This gingerbread trifle is amazing and because it is a trifle it has so many delicious layers that it feels like it will never end! And that is a great thing.   I had never tried trifle until late in my college years. I was at a dear friend’s house and after dinner she pulled out this huge glass dish filled with fruit and cool whip. It was so beautiful and I couldn’t wait to try it! Well, it did not disappoint! Super creamy rice pudding with warm spices and raisins, you can’t go wrong! This is the best rice pudding recipe I’ve ever made! It’s super easy too because you can use leftover rice. I love making rice pudding with cooked rice because that is one step already done for you and more than half the cooking time cut in half, score! I used long grain white rice to make this recipe but basmati rice works well too.     What makes this version the best rice pudding recipe? It’s the addition of regular and golden raisins along with a pinch of nutmeg and cinnamon. Warm spices really make this easy rice pudding shine! Alternatives and Add-Ons: Experiment with dried fruits like dried cherries, apricots, or even mango in place of the raisins. Who knew vanilla instant pudding could be such a killer secret ingredient to THE perfect, MOST chewy, absolutely softest and best chocolate chip cookie recipe?!?! I made these cookies for church yesterday and they were a HUGE hit!  I’ve been playing with this recipe for a few months now and wish I could say it only took me only a couple tries to create an easy, fool proof chocolate chip cookie recipe that was addicting.  Well, it didn’t.  I have attempted these cookies at least 5 or 6 times with different techniques like cold butter verses room temperature butter verses melted butter (melted butter won, BTW). OR with 2 eggs verses 3 eggs and different measurements of flour to even out the additional dryness of adding instant vanilla pudding.  Well, I’ve finally figured it out and can’t wait to hear your feedback! I have read TONS of recipes and reviews on chocolate chip cookie recipes during the process. Since each cookie recipe is slightly different, I wanted to figure out what most cookie recipes had in common.  Here are the two most common instructions which I think are included in almost every single chocolate chip cookie out there: First, do NOT over-bake!  The cookie should only bake until there is a hint of golden brown and then removed from the oven.  If you’re unsure about the color, I would error on the side of slightly under-baking these bad boys and go by your kitchen timer (8 to 10 minutes only).  Once removed from the oven, allow them to completely cool down on the baking sheet.  This will allow them...

Bacon, cheese and potatoes… do I need to say more? Well, this cheese potato casserole recipe is all that and more! It is the best combination of flavors and it has green onions which really take it to the next level. I mean green onions take almost anything to the next level, am I right? I love potato casserole recipes. One of my favorite dishes is my sister-in-law’s cheesy potato recipe, it combines both sweet potato and white potatoes. She brings it every year to Thanksgiving and you better believe I load my plate up! I’ve also had a sweet potato casserole with kale, heavy cream and parmesan in it. Super good and also a personal favorite! My friend who makes it always makes amazing food so it’s no surprise I loved that casserole. Anyways, enough about other potato casseroles let’s talk about this one. This cheesy potato casserole is super simple to make. To make: Boil the potatoes and let cool. Once cooled, peel and cut the potatoes Mix together sour cream, soup, cheese, bacon and green onions Spread 1 cup of cheese mixture on the bottom of a 9×13 baking dish Add a layer of potatoes and then repeat with the cheese mixture, more potatoes and finish with the last of the cheese mixture Bake at 350F for 35-45 minutes and then enjoy!
