Who knew you could substitute heavy whipping cream and butter in alfredo sauce with cauliflower? When I mentioned it to one of my friends, she emphatically told me not to try it because she made a cauliflower alfredo recipe from Pinterest and it failed miserably. Her husband made her promise, swear, and crosse-her-heart to never try it again. Well, you know how I love a challenge. I’ve had a couple recipe fails too. The sauce wasn’t creamy enough or too thick or not flavorful enough. However with a little tweaking and determination, by George I think she’s got it! I love LoVe LOVE making recipes taste so delicious that no one will believe how healthy it is. This, my friends, is a keeper. I tested it out on my husband, his brother, and close friend without telling them the ingredients. After they cleaned their plates and dishing up seconds, I told them the sauce was cauliflower! When the weather is cold, it’s time to whip out the comfort food. Creamy, cheesy, and flavorful soups always hit the spot for me. AND isn’t it a must that potatoes be involved? Well, you’re going to fall head-over-heels for this Creamy Potato Soup that I originally shared on Pretty Providence. Can I let you in on a little secret? It’s healthy too! Your eyes might be surprised at some of the ingredients, but your mouth will thank you for making it. Many people think ‘coconut milk‘ is some exotic ingredient, BUT you’ll find it right next to regular milk in the grocery dairy section. It’s high is GOOD fats and a great substitute for heavy whipping cream. It also does not taste ‘coconuty’. It’s really rich and creamy and you won’t be able to tell a difference. Trust me, I’m looking out for your tastebuds and health! Print Creamy Potato Soup Ingredients 32 oz natural or organic chicken broth 1 medium sweet onion diced 4 large potatoes peeled and diced 1 head of cauliflower washed and cut into florets 1 cup original coconut milk 3 cups shredded Colby Jack cheese 1 tsp salt 1 tsp black pepper Instructions In a large pot, bring chicken broth to boil. Add onion, potatoes, and cauliflower. Cover and reduce heat but keep broth boiling. Boil for 20 to 25 minutes until potatoes and cauliflower are soft. I tried numerous of times to make mashed potatoes with cauliflower. One time, it turned out like a soup. AND then one time, it was really chunky. After my many fails, I was about to give up on trying until I FINALLY figured it out! The texture turned out perfect. Try them out and let me know what you think! Print Mashed Potatoes with Cauliflower Ingredients 1 head of cauliflower cut into florets and washed well 3 large red potatoes washed well and cut into chunks 1 cup coconut milk 1 Tbs fresh parsley 1 Tbs oregano 1 tsp fresh or dried rosemary 1/2 tsp salt 1/2 tsp black pepper 1/2 cup fresh grated Parmesan cheese optional Instructions In a large skillet, bring cauliflower florets and 1 cup coconut milk to a boil. Cover, reduce heat, and simmer for about 15 minutes until tender. In a large pot, bring about 4 cups of water to boil. Add potato chunks and boil for about 15 minutes until tender. Once cauliflower and potatoes are tender, drain both and return them back to the large pot. Add parsley, oregano, rosemary, salt, pepper, and cheese.
