Blueberry Streusel Coffee Cake Recipe

- ½ cup brown sugar
- ½ cup white sugar
- 2/3 cup bisquick mix
- 1 tsp cinnamon
- ¼ cup butter softened
Coffe Cake
- 2 cups bisquick mix
- ½ cup milk
- 2 tbs sugar
- ½ tsp vanilla extract
- 1 egg
- 1 ½ cups blueberries
Simple Glaze (Optional)
- 1 cup powdered sugar
- 1 tbs milk
- ½ tsp vanilla extract
For the coffee cake:
Mix all coffee cake ingredients EXCEPT the blueberries, until well blended.
Gently fold in the blueberries. If you mix too vigorously the blueberries will break and turn the whole cake a dark blue/grey.
Spread into prepared pan and sprinkle streusel evenly over the top.
Bake for 18-22 minutes or until golden brown.
For the glaze:
Combine all the ingredients until smooth. If it is too thick, add additional milk one teaspoon at a time.
Drizzle over coffee cake.
