For Cobbler Topping:
1cupwhole wheat pastry flour
1/3cupbrown sugar
1tspbaking powder
1egg whitelightly beaten
2Tbscoconut oilmelted
Cinnamon Sugar Topping:
1tspsugar
1/8tspground cinnamon
Instructions
Preheat oven to 350.
Spray four 7 oz (200 mL) ramekins lightly with olive oil cooking spray and scoop 1/2 cup of berries in each.
In a Vitamix blender, blend orange and 2 Tbs brown sugar together on high until pureed and smooth. Pour about 1/8 cup of orange mixture over the berries.
In a small bowl, combine flour, brown sugar, and baking powder. Stir well. Add egg and coconut oil. Mix until crumbly dough is formed. Evenly sprinkle dough over each cobbler making sure tops are well covered.
Combine cinnamon and sugar. Sprinkle over crumb mixture.
Bake for 25 to 30 minutes until tops are golden brown. Serve warm.
