Mini Blueberry Cobbler- No Diets Allowed

Mini Cobbler

Ingredients

  • 2 cups fresh or frozen organic raspberries for a girl or fresh or frozen organic blueberries (for a boy)
  • 1 large orange peeled
  • 2 Tbs brown sugar

For Cobbler Topping:

  • 1 cup whole wheat pastry flour
  • 1/3 cup brown sugar
  • 1 tsp baking powder
  • 1 egg white lightly beaten
  • 2 Tbs coconut oil melted

Cinnamon Sugar Topping:

  • 1 tsp sugar
  • 1/8 tsp ground cinnamon

Instructions

  • Preheat oven to 350.
  • Spray four 7 oz (200 mL) ramekins lightly with olive oil cooking spray and scoop 1/2 cup of berries in each.
  • In a Vitamix blender, blend orange and 2 Tbs brown sugar together on high until pureed and smooth. Pour about 1/8 cup of orange mixture over the berries.
  • In a small bowl, combine flour, brown sugar, and baking powder. Stir well. Add egg and coconut oil. Mix until crumbly dough is formed. Evenly sprinkle dough over each cobbler making sure tops are well covered.
  • Combine cinnamon and sugar. Sprinkle over crumb mixture.
  • Bake for 25 to 30 minutes until tops are golden brown. Serve warm.
