Whole Wheat Banana Bread


  • 2 cups whole wheat pastry flour
  • 2 tsp aluminum-free baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 2 eggs well beaten
  • 1/2 cup olive oil
  • 1/2 cup unsweetened applesauce
  • 1/2 cup honey
  • 1 tsp pure vanilla
  • 2 ripe bananas peeled and mashed


  1. Preheat oven to 350.
  2. Combine flour, baking powder, cinnamon, and salt in a medium-size bowl. Set aside.
  3. Blend together eggs, oil, applesauce, honey, and vanilla. I HIGHLY recommend a Vitamix! It will make your life so much easier.
  4. Pour wet ingredients into dry ingredients and mix well. Fold in mashed bananas.
  5. Spray one large loaf pan (8.5 in x 4.5 in) lightly with cooking spray. Pour batter into prepared pan.
  6. Bake for 35 to 40 minutes or until toothpick inserted into the center comes out clean.
