An easy, gluten free sweet potato pie recipe that everyone will love. It can easily become a Dairy Free Sweet Potato Pie with a few changes.

Ingredients
Sweet Potato Pie Crust
½cupalmonds, finely chopped
1cuppecans, finely chopped
¼cupbutter, melted
½cupcoconut sugar
1tspvanilla
¼cuptapioca flour/starch
1egg
Sweet Potato Pie Filling
2eggs
3tbsbutter or coconut oil, softened
1cupcoconut cream
½cupmaple syrup
2cupssweet potato puree
1tspcinnamon

How to make Sweet Potato Pie Crust
Preheat oven to 350°F and thoroughly grease your pie pan with butter or coconut oil.
Combine pecans, almonds, sugar and vanilla. Once well combined add flour and egg.
Press crust mixture into pie pan. It will probably be quite runny.
Bake in preheated oven for 20 minutes.
How to make Sweet Potato Pie Filling
While crust is baking, combine all the ingredients for the filling. Making sure they are well combined.
When crust is done, pour filling into the dish.
Bake for 10 minutes at 400°F. Then reduce the temperature to 325°F and bake for 35 minutes or until cooked through.

Notes: Sweet potato: If you are making your own sweet potato puree check out how to do it here! You will want to plan ahead if you are since baking the sweet potato takes time.You can use a food processor to chop the nuts into small pieces. I like to then put all the other ingredients in the food processor and let it do the mixing. Also, make sure the pie dish is well greased because it can be hard to get out otherwise. I like to buy my tapioca flour/starch in bulk from a local health foods store since it’s usually cheaper, but it can be found online or prepackaged located with alternative flours at most grocery stores.
