All Green Smoothie

Although I know the green color can be a little scary, endless blessings come from this power drink.  It’s enjoyable and sweet even though you’re eating tons of veggies, fiber, several vitamins and nutrients, and a nice energy boost for the day. My husband was hesitant when checking out the green color.  He slowly took a sip, looked surprised, and said, “this is really good, babe!” He was hesitant no more and the smoothie was history.     There are lots a fresh veggies and fruits in this smoothie.  PLEASE, I’m seriously begging, wash (not rinse with water) all of them.  You completely void all the good if you’re putting in all those chemicals, dirt, pesticides, and waxes they accrue before coming home with you.  Don’t know how to wash your vegetables or why it’s important?  Check out this post on why you should wash your vegetables.  You can visible see the difference in the images I share.   If you feel this smoothie is too sweet or tart, add a scoop of vanilla protein powder or a banana. Both or one of these will add a subtle sweetness.  Sit back, smile, and enjoy your smoothie while your stomach and body thank you for all the nutritional goodness. If you need baby steps before jumping on-board the ‘green’ train, this smoothie is for you.  It’s very similar to my scrumptious All Green Smoothie, but with fewer green items that hopefully freak you out less. Have you read my post on making your own healthy smoothie?  It lists 4 musts of smoothie making.  One essential element is having a quality blender.  Everything will be chunky and you will not be able to get a smooth consistency without an awesome blender.  I’ve heard good things about the Ninja and BlendTec, but I’m a Vitamix lover myself.  Here’s why you should buy a Vitamix. Penne with Turkey Sausage and Tomatoes

Print Penne with Turkey Sausage and Tomatoes Ingredients 8 oz whole wheat penne pasta 2 tsp olive oil 1 lb mild or hot Italian turkey sausage 1 small onion diced 1 tsp minced garlic 1 lb tomatoes finely chopped including seeds 2 handfuls of fresh spinach 1 tsp dried oregano 1/4 tsp pepper 1 Tbs feta cheese Instructions Cook pasta according to package directions. Drain well. Meanwhile in a large skillet, heat 1 tsp olive oil over medium heat. Squeeze sausage out of casing directly into skillet, breaking up any large pieces with spoon. Cook until brown. Transfer to plate. Add remaining 1 tsp to skillet. Cook onions and garlic for about 3 minutes. Stir in tomatoes, oregano, pepper, and sausage. Increase heat to bring to simmer. Reduce heat and allowed to simmer uncovered for about 5 minutes. Add spinach and only cook until spinach is slightly wilted. Remove from heat. Add pasta to sausage mixture and stir well. After dishing up appropriate serving size to plate, sprinkle with feta cheese and additional oregano, if desired. Serve and...

Turkey Bacon Stuffed Chicken

 This is one of my favorite chicken recipes!  It’s juicy, salty, and has crispy onions and turkey bacon.  There are lots of different side dishes I like to  pair it with, but I think my favorites are my potato wedges and steamed yellow squash. I continue working on improving my photography.  Here’s another ‘before’ and ‘after’! Print Turkey Bacon Stuffed Chicken Ingredients 4 chicken breasts thawed 1 large onion chopped 1 tsp minced garlic 1½ cup mushrooms finely chopped 6 slices turkey bacon finely chopped 2-3 handfuls of fresh spinach 2 Tbs olive oil 1 tsp salt ½ tsp pepper 1 tsp of dried or fresh rosemary roughly chopped toothpicks Instructions Preheat the oven to 350 F. Cut chicken breast in half, but do not cut all the way through. Open the chicken until flat and pound with meat mallet until the breast is evenly about ¼ inch thick. Heat olive oil in pan over medium heat. Add onions, mushrooms, and turkey bacon and sauté until onions are translucent. Then add the garlic, rosemary, and spinach. Cook just until the spinach has wilted down. Remove from heat. Spread the mixture over each chicken breast. Roll up breast starting from one end to the other and secure with the toothpicks. Spray a baking sheet with non-stick olive oil spray. Place chicken breasts on sheet and drizzle each breast with olive oil. Sprinkle salt and pepper on each. Bake until chicken is no longer pink on the inside which is approximately 20 to 25 minutes. Remove toothpicks and serve with your favorite side...
