I’ve got a secret love…. my Vitamix Blender!  I throw in all sorts of RAW vegetables and fruits, and my Vitamix blends everything so well that it turns out smooth and creamy no matter what.  I can’t live without it!  This Creamy Peach Smoothie is NO exception.  The juiciness of the peaches and sweetness of the banana mask the taste of the cabbage and carrots.  Try it and let me know what you think!   Print Creamy Peach Smoothie Ingredients 1 cup vanilla almond or coconut milk 1 scoop vanilla whey or vegan protein powder optional 1 medium carrot peeled or 1 cup baby carrots 1 cup chopped cabbage 1 banana peeled 2 cups fresh or frozen peaches If you use fresh peaches, add one cup of ice Instructions Add ingredients in your Vitamix blender in order listed. Multigrain Waffles

Fluffy, satisfying, and sweet waffles brimming full of nutrients is the perfect way to kick-start your day.  These are a family favorite including my two year old.  She loves them with natural peanut butter and bananas. This batter can be refrigerated up to 3 days.  However, the chia seeds and oatmeal can absorb lots of the liquid.  Just add 1/4 to 1/2 cup more almond or coconut milk prior to using.   Chia seeds and Flax seeds can be found prepackaged or in bins at your grocery store (I’ve seen them in Whole Foods and Winco bins).   These little seeds carrying a mean nutrition punch.  They’re brimming with healthy fats, Omega-3s, protein, fiber, and lots and lots of power to fight obesity, Diabetes, and heart disease.  Their mild flavor and texture is not even noticed, but your body will love and soak up all their nutritional value.  Flax seeds can be ground into meal. I put 2 Tbs of Flax seed in my Vitamix to finely grind to a flour-like consistency. Viola!  You have Flax seed meal.   Instead of high sugary options like syrup, top them with your favorite fruit or natural peanut butter and bananas.  The burst of sweetness, juiciness, and flavors will make this a perfect healthy breakfast.  You’ll be full, satisfied, and energized by all vitamins and anti-oxidants.  Enjoy and get ready to attack this day! Print Cinnamon Sugar Tortilla Chips with Tropical Fruit Salsa The crisp, cinnamon sugar tortilla chips are perfect with the sweet and juicy tropical fruit salsa. Ingredients 3 whole wheat flour tortillas I LOVE Tortilla Land's raw tortillas found at Costco 2 Tbs Coconut oil or soft real butter 2 Tbs sugar 1 tsp cinnamon For the Tropical Fruit Salsa: 1 cup fresh pineapple finely diced 1 cup fresh strawberries about 6, finely diced 1 large ripe mango finely diced 1 large ripe peach finely diced Instructions Preheat oven to 375. Brush oil or butter over one side of each tortilla. Combine cinnamon and sugar in separate small bowl. Sprinkle cinnamon sugar evenly over top of tortillas. Cut tortillas into 8ths. Place chips on lightly greased baking sheet. Bake at 375 for 8 to 10 minutes for already cooked tortillas or 11 to 13 minutes for raw tortillas until golden brown and crispy.
