Brazilian Gluten Free Cheese Bread or Pão de Queijo

Pão de queijo is very traditional in Brazil, where I come from. It’s a gluten free cheese bread. Pão means bread and queijo means cheese. We eat it for breakfast, as a snack during the day or with our afternoon coffee. It’s everywhere. At every bakery, supermarket, coffee shop, at the table at your grandma’s house. There’s even a fast-food chain dedicated to it. Hot and freshly baked is how you want to enjoy these babies. They can be eaten a few hours after baking as well, but they start to lose quality as they sit. If you’re eating a day old pão-de-queijo you should probably toast it first but honestly, you will hardly ever have that problem as your leftovers will probably be nonexistent. I’ve been living in America for over 5 years and pão-de-queijo is still one of the things I miss the most about Brazil, right after my family. It goes: 1)my family 2) pão-de-queijo 3) my friends (sorry, guys!). I can still have pão-de-queijo here in the US, I make it all the time, since I can’t just walk into any establishment and buy it. I make a big batch and freeze them so anytime I want some, or have company coming over, I throw some in the oven for a quick and delicious snack. It’s gluten free because it’s made with manioc flour- sour or sweet, though I prefer the sour. This recipe was passed on to me by a friend. Her mother-in-law used to make this when she was alive and she had been missing them, since she hadn’t had them in years. I couldn’t stand back while a friend was missing the taste of some delicious carrot cookies someone dear to her used to bake. I just couldn’t do it. I had to jump in! She provided me one of those old recipe cards that her daughter had found that had belonged to her grandmother. The recipe had somewhat vague instructions and was missing the glaze part. After asking a couple questions about the texture of the cookie and glaze consistency and taste, I arrived to what I believed would meet those requirements. And they did (I hope they did!). All you have to say is ice cream and I’m there! I love ice cream!  These days, I try to find ways to eat healthy but still enjoy my favorite desserts. So when I found a recipe for chocolate chip homemade ice cream made out of bananas I had to give it a try. I was very skeptical at first because who would believe bananas could turn into anything with an ice cream consistency?! It quickly won me over though. This recipe is so versatile! You can do just plain bananas, add a few drops of mint extract, or try adding chocolate and peanut butter for an awesome combo. No matter the type of meal you are looking for, you are sure to find in this basic stew recipe, a way to make it happen! This simple stew recipe calls for beef broth, tomato juice, garlic, sweet potatoes, carrots, beef, and spices. There are actually two ways you can make this stew in the instant pot; the easy way that’s ready in about 40 minutes, or the slightly longer (but even yummier!) version. The easy version: throw everything in the instant pot, cook for 30 minutes and then serve. That’s the quick way out. Recipe For Mango Salsa

This is a very easy mango salsa recipe! The easiest! But don’t be fooled by its simplicity, because this fresh mango salsa is absolutely delicious! I love me some salsa. Tomato, mango, peach, collard greens, pineapple, jalapeno, avocado, corn, you name it, I’ve turned it into salsa! I love eating salsa with my tacos, pita pocket sandwiches, enchiladas, or simply with tortilla chips. Anytime I have some leftover tortillas from a taco feast, I like to turn them into chips. I cut the tortillas into triangles, toss them with a bit of olive oil and whatever spices I’m in the mood for that day, salt, pepper, garlic powder, cayenne, italian seasoning and then I bake them at 375ºF for 5-8 minutes until crispy. And to me, there’s no better way to eat delicious homemade tortilla chips than with salsa!   I really like to pair this mango salsa with pork tacos or fish tacos. They compliment each other so well. The mango makes the pork or fish shine and vice-versa. I like to use habanero for this salsa, but if you don’t like a lot of heat, sub in any other pepper, even sweet ones.   This recipe takes about 10 minutes to put together, so I recommend assembling it close to the time you are planning on eating it. Leftovers will be fine in the refrigerator for a day or two, but fresh is best. And that’s what this recipe for mango salsa is all about: freshness.
