Easy Sausage, Potato, and Carrot Stew

If you want an easy, quick, last minute dinner idea, stop right here on this easy sausage stew.  I FREQUENTLY make this for dinner.  And when I say frequently… I mean almost every week.  I keep waiting for my family to revolt and scream out protests of having to eat this dinner one. more. time.  BUT there’s not even ONE sign of disappointment when I whip this out on those just-be-happy-the-house-is-still-standing days. It’s pretty easy to always have the ingredients on hand for this sausage stew.  I’m really loving Al Fresco’s chicken sausage right now.  There’s a wide variety of sweet to spicy flavors along with minimal processing.  I find mine for $4 or less at Winco.  I stock up and throw them in the freezer when I get home.  It’s precooked and easy to add into recipes like my Chicken Sausage and Rice Soup. Also, I buy bulk organic carrots and sweet potatoes at Costco.  I’m slowly being converted to all organic produce because I can TASTE a huge difference.  It’s like having garden fresh fruits and vegetables.  Not to mention skipping out on all the nasty chemicals and pesticides.  Don’t believe me?  Do your own taste test.  Since organic carrots are pretty cheap, start by getting some regular fresh carrots and some organic carrots.  Compare the color, quality, and taste.  You’ll quick understand why I’ve become a believer in organic! This ‘before’ wasn’t my worst (trust me… it’s coming), however I was still excited to trash my ‘before’ and improve the image. Natural light makes the photo warm and inviting by emphasizing the true colors of the food.     When the weather starts to get cold, all I want to do is cuddle up in a blanket with a warm bowl of stew.  Especially a bowl of THIS stew. Red AND sweet potatoes, corn-on-the-cob, carrots, and tender, melt-in-your-mouth pork?  I just had a large bowl, but I’m ready for seconds!   Print Golden Harvest Stew Ingredients 2 pound boneless pork cutlets or sirloin tip roast cut into 1-inch pieces 2 Tbs olive or coconut oil 6 small red potatoes washed and cut into 1-inch cubes 1 large sweet potato peeled and cut into 1-inch cubes 3 large carrots peeled and chopped 2 ear corn shucked and broken into pieces (about 8) or 1 cup frozen corn 1 small sweet onion chopped 32 oz organic chicken broth/stock 15 oz organic vegetable broth 1 jalapeno seeded and finely chopped (or leave seeds in for added spice) 2 tsp minced garlic 1 tsp salt 1 tsp thyme 1/2 tsp pepper Chopped parsley Instructions Heat oil in large skillet over medium-high heat until hot. Add pork or sirloin pieces and cook until browned on all sides. Transfer to crock-pot slow cooker. Add remaining ingredients, except parsley, and mix well. Cover and cook on HIGH 5 to 6 hours, or until done. To serve, sprinkle with parsley. Healthy Olive Garden Copycat Zuppa Toscana

Who doesn’t love The Olive Garden?  Warm bread sticks, salads with tangy dressings, warm pasta and soup = pure yumminess.  When I was pregnant and very, very nauseated, I fell in love with Olive Garden’s Zuppa Toscana.  It’s perfectly seasoned with a variety of textures and flavors. However, it’s definitely not the healthiest soup.  It has heavy whipping cream, butter, bacon, and who knows what else.  Since I refuse to compromise on flavor and my health, I made a few tweaks (like using coconut milk instead of heavy whipping cream) and created this masterpiece!  Your family (nor your taste-buds) will know the difference. Print Healthy Olive Garden Copycat Zuppa Toscana Ingredients 1 lb Turkey or lean ground sausage I prefer the HOT option to make it spicy 1 large onion chopped 4 medium red potatoes washed and thinly sliced into about 1/4 inch slices 2 tsp minced garlic 6 slices of turkey bacon cooked and finely chopped 1 32 oz container of Organic Chicken broth/stock 4 cups water 1 large bunch of kale washed and coarsely chopped 1 cup coconut milk Instructions Brown sausage and onion in large pot. Add chicken broth/stock and water to pot. Bring to boil. Add potatoes, garlic, and turkey bacon. Cook until potatoes are soften about 15 minutes. Add kale and cook for additional 3 minutes.
