These pumpkin banana muffins are light, fluffy, and perfect for the Fall.  They are meant for breakfast, but don’t be surprised if you’re tempted to eat them for every single meal throughout the day.  I made a batch this morning and my three year old wanted them for every meal AND snack!  He’s now in bed with a stomach full of these deliciously fulfilling healthy pumpkin banana muffins. This is my VERY most favorite time of the year.  It’s right before the holiday season kicks off with Halloween, the weather is starting to cool, leaves are changing, AND it’s prime time for comfort food.  I’m already a huge fan of quick breads and have a special weakness for banana pumpkin recipes.  I created these Chocolate Pumpkin Banana Muffins a couple years ago and have not looked back since.  If there’s a potential recipe where I can continue to combine banana and pumpkin, create I will. I know I repeat myself, however I love sneaking healthy ingredients in recipes without anyone knowing.  Fabulously healthy grains like chia seeds and flaxseed are easy to add into muffins such as these.  Also, I have tried several different whole wheat flours and now only use Bob’s Red Mill whole wheat pastry flour.  It keeps your baked good light, fluffy, and healthy.  Trust me.  It’s a must try.   SO if you’re wanting to keep this pumpkin banana muffin healthy, you can spread coconut oil instead of butter over fresh-out-of-the-oven muffins and drizzle pure honey on top.  You can thank me later.  Now hurry and go bake these addicting banana pumpkin muffins. Muffins! Do I have your attention, now? Yes, muffins got your attention! Because they are super delicious! One of men’s best creations. Muffins are best friends with coffee and pretty much the reason why I even bother getting out of bed some days. Here’s my proposal, do an experiment, make a batch of muffins and bring to work, or right before your spouse comes home. See how much love you are going to get for bringing muffins into people’s lives. I’ve been doing it for years. I am not ashamed of getting people’s affections through baked goods, specially muffins, since that’s the hot topic. Muffins are mini joy cakes. They are supposed to be fluffy and sweet, but not overly sweet. They are usually accompanying a cup of tea or coffee, or if you are my husband, milk. Loved by most, desired by all. Nobody has ever said no to a fresh baked muffin standing right in front of them.   Even your friends with egg allergies or on a diet. They can totally be a part of the love-sharing with these eggless, sugar free muffins. So my advice to you is to go ahead and bake some of these whole wheat muffins today! Or tomorrow! Chocolate Pumpkin Banana Muffins

These light, fluffy, crumbly and chocolatey Pumpkin Banana Muffins will be a perfect holiday breakfast. It has been WAY too long since I’ve posted, and I’ve missed it!  These Chocolate Pumpkin Banana Muffins were just the motivation to take a pause during life’s craziness and share this recipe. Am I the only one who self inflicts pure craziness upon myself?  The other day I was running in 10 different directions and stopped for a minute to think why things were so disarray.  Then it hit me… I’M the reason for the chaos.  From being a mom, wife, involved in my church, registered nurse, blogger, and organizing the most killer food blogger conference in existence, I chose every crazy thing going on around me AND I love it! I love the holidays where everything slows down for just a second and reminds me how my husband and kids are by far my most rewarding and energizing part of my life.  My baby boy is 15 months and his cheeks just scream ‘kiss me all day, mama’! My sweet girl is almost 4 and love her sassy, independent mother-to-anyone-smaller-than-her self.  AND I just celebrated yesterday 8 years with my husband, best friend, and equal partner in every way.  I’m one blessed lady!  No complaints here… except that I already ate all of these muffins. I cannot believe we’re on the last half of July!  Does anyone else feel like this year is flying by?  I want to slam the breaks on my summer days and prolong the summer as long as possibly especially since my baby boy is rapidly approaching his first birthday!!  I tear up thinking about it.  Am I the only mom who gets emotional on birthdays?  If so… just lie and say you get me. Well, at this point, all I can do is hang on, enjoy every second, and comfort myself with these light, fluffy applesauce muffins.  Not only are these approved by my husband and 3 year old, my cute baby smeared the muffin all over his face while he hastily ate his. Before I started blogging, I was clueless on how this all worked.  Extremely clueless.  It is hard work juggling everything!  I started meeting other bloggers and quickly realized this blogging business is packed with talented, educated, and family-focused individuals.  We have a passion and want to share it with others.  We spend long, late hours working while our kiddos sleep in order to build our businesses. Banana Zucchini Muffins

I’m often tempted to call these muffins my favorite.  THEN I start thinking about how much I love my other light and fluffy muffin recipes too.  Morning Glory Muffins and Pear Apple Granola Muffins, don’t get jealous.  I love you too.  However, it’s time to spotlight these amazingly perfect, moist and rich Banana Zucchini Muffins. Inspired by my Zucchini Banana Bread Pancakes, these muffins are light and fluffy and healthy! My favorite combination.  My 3 year old daughter has a perfect name for muffins… ‘muffin cookies’.  These are going to tempt you all day long with their sweet goodness. In the mornings while they’re baking, she’ll run over about every 5 minutes, look in the lit up oven, and ask if her muffin cookies are ready.  I know, baby girl.  I can’t wait either.  My husband knows he better grab a couple freshly baked because they will not be here when he comes home from work.  These muffin cookies will be long gone by then. Remember how I created my 3 ingredient blender ice cream because dairy and sugar trigger my migraines?  Well, eggs are another thing that gives me headaches.  Oh, my silly headaches and food sensitivities.  I had two choices… spend time on my pity-party or figure out how to create my favorite foods without eggs.  With a little tweaking and trial and error, I discovered baking powder, olive oil, and applesauce were the perfect egg substitute in muffins.  Even though there are no eggs in this recipe, they have a great peak and consistency.  Success!
