Easy Strawberry Spinach Salad

When it comes lunchtime, I’m a salad-aholic.  There’s just something about combining crisp, fresh vegetables and fruits sprinkled with a little dressing.  Since I’m usually juggling my ready-for-a-nap 2 year old while quickly preparing lunch, I forego the photo shoot and just enjoy eating.  Well, I couldn’t pass up sharing this spinach strawberry salad.  It’s quick, easy and full of flavor.  You can also adapt the salad to include your favorite ingredients.     If you haven’t tried balsamic vinegar, what are you waiting for?!?!  I fall more and more in love with its versatile flavor.  Its fabulous spicy when combined with chili powder and cayenne pepper like in my Chili Chicken Skewers or delectable with fresh lime juice like in my Balsamic Quinoa Salad.  For this easy strawberry spinach salad dressing, I combined balsamic vinegar with organic agave to make it sweet.  It’s a must buy ingredient!  I’ve enjoyed this $5 Colavita Aged Balsamic Vinegar.  It’s a great flavor for the price… trust me, balsamic vinegar can get pretty pricey.           You really can play around with this salad and make it your own.  I love to add diced Fuji apples or fresh blueberries when I don’t have fresh strawberries on hand.  You can also add crumbled blue cheese or feta (I’m staying away from soft cheeses due to my current pregnant status) or even black beans.  My husband also digs a couple grilled chicken tenders on top.  Make it your own, my friends!  You’ll never get tired of it’s incredible flavor and textures.   PrintEasy Strawberry Spinach Salad Ingredients2 large handfuls of fresh organic spinach (about...

I’ve seen lots of different variations of an apple sandwich. I love keeping it simple with juicy apples, sweet bananas, and flavorful strawberries.  I’ve also seen where you can top your apple slices with peanut butter and granola, almond butter and raisins, or you can just try my way. Remember how I’m a fruit-aholic?     You begin by washing your apples and fresh strawberries. Seriously… scrub those babies.  I know I keep talking about it, but I seriously am in love with Fit: Fruit and Vegetable Wash.  Anyways, then thinly slice your apples (I did both organic Fuji and Granny Smith). To prevent them from browning, lightly coat slices with lemon or lime juice (makes it a little tart) or pineapple juice (a sweeter option). You can use the same method for your banana slices. Top your apple slices with banana and strawberry slices. Viola! Strawberry Banana Morning Smoothie

I’m addict to adding oats in my smoothies for breakfast.  I make this creamy and refreshing smoothie almost as frequently as my Banana Apple Oatmeal Smoothie.   Oats are high in fiber and protein while adding a mild flavor and creamy texture.  Why not add more protein and fiber where you can?  Especially to give you a boost in the mornings.       You can make this smoothie in less than 5 minutes (I timed it).  I want to make healthy tasty and quick for you!  I also added Chia seeds and an organic carrot.  Just like the oats, they are mild in flavor but add rockin’ nutritional value.  Please purchase organic carrots.  One day I was eating a raw carrot (not organic), and I noticed my tongue start to tingle.  Not only that, but I had a weird aftertaste which resembled something like soap not a carrot.   Carrots have a thin skin which allows them to absorb pesticides, chemicals, and other nasty stuff.  They’re actually pretty cheap too!       You and your kids will love LoVe LOVE this new breakfast option!     PrintStrawberry Banana Morning Smoothie Ingredients2 cups vanilla almond milk 1/2 cup whole quick oats 1 Tbs Chia seeds 1 medium banana, peeled 1 organic carrot, peeled 2 cups frozen organic strawberries InstructionsAdd ingredients in order listed into Vitamix blender. Fluffy, satisfying, and sweet waffles brimming full of nutrients is the perfect way to kick-start your day.  These are a family favorite including my two year old.  She loves them with natural peanut butter and bananas. This batter can be refrigerated up to 3 days.  However, the chia seeds and oatmeal can absorb lots of the liquid.  Just add 1/4 to 1/2 cup more almond or coconut milk prior to using.   Chia seeds and Flax seeds can be found prepackaged or in bins at your grocery store (I’ve seen them in Whole Foods and Winco bins).   These little seeds carrying a mean nutrition punch.  They’re brimming with healthy fats, Omega-3s, protein, fiber, and lots and lots of power to fight obesity, Diabetes, and heart disease.  Their mild flavor and texture is not even noticed, but your body will love and soak up all their nutritional value.  Flax seeds can be ground into meal. I put 2 Tbs of Flax seed in my Vitamix to finely grind to a flour-like consistency. Viola!  You have Flax seed meal.   Instead of high sugary options like syrup, top them with your favorite fruit or natural peanut butter and bananas.  The burst of sweetness, juiciness, and flavors will make this a perfect healthy breakfast.  You’ll be full, satisfied, and energized by all vitamins and anti-oxidants.  Enjoy and get ready to attack this day!
