Let me clear up a big misconception about healthy eating… you can eat healthy and totally indulge on dessert!  Did you catch my confession on eating an entire batch (2 dozen) of my Peanut Butter Chocolate Chip Cookies? I feel no embarrassment nor regret and will do it again very very soon.  Someone should warn these brownies that they’re in for the same fate… but I will have already devoured them by the time the messenger gets here.  Poor delicious, sweet brownies.  That’s what you get for being yummy and healthy. Okay, before I get lots of sugar-haters rebuking me for using 1/2 cup of sugar (don’t worry… I still love your passion!), you can substitute the sugar for 1/4 cup honey.  Although I loved the results with just 1/4 cup honey, it did not pass my ‘husband-must-LOVE-it-or-I-don’t-post-it’ test.  Although we’re not huge chocolate fans here (don’t worry… the shock wears off in a few seconds), my husband actually had seconds.  We topped them with fresh strawberries and some of my creamy dairy-free blender ice cream.  So delicious! Wait… I haven’t told you the secret ingredient yet, have I?  I know sugar can be pretty magical, but get ready for a surprise! You better sit down.  The secret ingredient is sweet potato!  I’m almost as excited as when I dropped that garbanzo beans are used in my Peanut Butter Chocolate Chip Cookies.  Sweet potatoes are high in Vitamin A which is linked to anti-aging benefits, cancer prevention and the maintenance of good eyesight.  SO…. we’ll just tell ourselves that eating these brownies helps reduce our wrinkles and fine lines.  Right, ladies? I love LoVe LOVE breakfast!  I’m currently playing The Game-On Health Challenge (come join the next round!), and I chose a gluten-free meal plan.  Since many of my favorite breakfast recipes have whole wheat flour such as my beloved Multigrain Waffles, I’ve been experimenting with all purpose gluten-free flour.  I was skeptical the they would turn out as great as my other waffle recipes… but they were tasty, fluffy, and a complete success. So… I can’t get enough of coconut.  Whether it’s coconut oil, milk, or flour, I’m loving all the health benefits and flavor.  My husband now loves spreading coconut oil on top of waffles and bread instead of butter.  Just another way to sneak in some healthy stuff just like I did with my homemade whole wheat bread. Well, you’ll get double the benefits with this gluten-free waffle recipe.  Of course I want you to slather lots of coconut oil on top, but the real coconut benefit is on the inside.  Coconut flour, which is super high in fiber, is a great gluten-free option.  It absorbs lots of liquid so you don’t need much and tastes great.  Can’t wait for you to try it!  It’s no secret.  I love breakfast.  I did a little research and found out that 31 million Americans skip breakfast.  What?!?! The most common reasons people skip breakfast were being too busy, not being hungry, or they just didn’t want to take time to eat.  It’s not hush-hush that breakfast is essential for healthy living and happy stomachs.  So… if you’re one of those missing out on the benefits of breakfast, I’ve created some quick and satisfying breakfast recipes.     My sister introduced me to combining eggs and oats for a quick pancake.  I’ve played around with a couple different combinations and found that adding a banana and some cinnamon added a perfect amount of sweetness and flavor.  Also, skip the butter and try spreading coconut oil on a warm pancake, slice up some fresh fruit, and pour on some pure maple syrup.   I have plenty of quick and tasty breakfast recipes for you.  Try my Banana Apple Oatmeal Smoothie, Breakfast Quiches, and Strawberry Banana Morning Smoothie.  These 3 ingredient pancakes along with the recipes just listed will have you smitten with breakfast just like me.     Print 3 Ingredient Pancakes Ingredients 6 eggs 1 large banana peeled 2 cups quick oats 1 tsp cinnamon optional Instructions In a blender (you know I love my Vitamix!), blend 6 eggs and banana for about 30 seconds until smooth. I see many of you have fallen in love with my Banana Muffins and Multigrain Waffles.  How could their light, fluffy, sweet and deliciousness not spark a breakfast-love affair?  I make both frequently and still obsessed.  So… one little morning, I decided to combine the two!  Word of caution: After making this banana waffle recipe, you may be tempted to make these every morning.  You may want to stock up on bananas.       My whole mission is to create tasty, sweet, and enjoyable food full of nutrition.  By sneaking in Chia seeds and Flax seeds, my mission is quickly achieved!  These little power seeds carry serious nutrition.  While your mouth is loving everything about these banana waffles, your body will be loving the support to fight obesity, Diabetes, and heart disease.  You can also grind up the flax seeds to make flax seed meal.  Just put desired amount (2 Tbs for this recipe) in a quality blender like a Vitamix to finely grind to a flour-like consistency. Viola!  You have flax seed meal.     Let’s talk toppings.  Don’t insult all the nutritional value of these waffles by topping them with margarine, butter, or artificial maple syrup.  Here’s some proven and loved topping options (remember my food critics, my husband and 2 year-old).  Spread coconut oil over warm waffle (just like you would butter) and then pour on pure maple syrup.  Or spread on natural peanut butter (my favorite is Adam’s Peanut Butter) and top with sliced fresh strawberries and bananas.  Both options are crazy good!  I can’t wait to hear about which one you like best.       Print Banana Waffles Ingredients...

  Why wait for breakfast to have these homemade fluffy pancakes?  Make these whole wheat pancakes from scratch for lunch or dinner!  Trust me… the light, airy, and sweet taste will be a hit no matter the time of day.   Also, will you PLEASE not insult their fluffy goodness by topping them with artificial, highly processed, full of sugar syrup?  However if you like maple syrup, there is still an option for you.  Pure maple syrup is the only right way to do it.  You still get the classic flavor of maple syrup without all the sugar, corn syrup, food dyes, preservatives, additives, and artificial flavors.     I love topping them with fresh fruit (strawberries, blueberries, pineapple, bananas, mangoes, raspberries, etc.).  Or you could spread some natural peanut butter on top.  I love Adam’s Natural Peanut Butter because it has one ingredient… peanuts.  If you haven’t heard me preach it before, I can say it again.  Read the ingredients on all pre-packaged foods you purchase!  You shouldn’t have to struggle pronouncing ingredients or wonder what they are.  You don’t have to compromise on flavor to eat something healthy and natural.  Adam’s Natural Peanut Butter and Now Foods Organic Maple Syrup are perfect examples.     Whenever I make muffins, waffles, or pancakes, they must be fluffy, light, moist, and sweet.  These homemade pancakes nailed all my criteria!  After you’re done devouring this delightful breakfast, you will definitely want to check out my Banana Muffins and Multigrain Waffles.  I promise you won’t be disappointed!
