I cannot believe we’re on the last half of July!  Does anyone else feel like this year is flying by?  I want to slam the breaks on my summer days and prolong the summer as long as possibly especially since my baby boy is rapidly approaching his first birthday!!  I tear up thinking about it.  Am I the only mom who gets emotional on birthdays?  If so… just lie and say you get me. Well, at this point, all I can do is hang on, enjoy every second, and comfort myself with these light, fluffy applesauce muffins.  Not only are these approved by my husband and 3 year old, my cute baby smeared the muffin all over his face while he hastily ate his. Before I started blogging, I was clueless on how this all worked.  Extremely clueless.  It is hard work juggling everything!  I started meeting other bloggers and quickly realized this blogging business is packed with talented, educated, and family-focused individuals.  We have a passion and want to share it with others.  We spend long, late hours working while our kiddos sleep in order to build our businesses. Ooooh, blueberry waffles.  How I love you.  Light, fluffy with blueberries bursting in your mouth… you’ll actually jump out of bed in order to make these.   Breakfast is by far my most favorite meal of the day.  If you’re a breakfast-skipper, you’re missing out on so many health benefits!  Eating breakfast, like these gorgeous healthy blueberry waffles, improves mood, concentration and performance, lower cholesterol, influence weight loss, and increases strength and endurance.   If you’re short on time in the mornings, double the batch and refrigerate the leftovers.  Then all you have to do is heat up your waffle iron and scoop on some batter.  Spread on some coconut oil instead of butter or margarine and then pour on some pure maple syrup (definitely read the ingredients!) topped with some berries and viola!   If you’re wanting more quick, easy, and healthy breakfast options, my Breakfast Quiches are super popular.  I make two dozen for my husband, he refrigerates them at work, and heats 3 to 4 up for a quick, protein-packed breakfast.  I have lots of great breakfast recipes because… well, I’m addicted to breakfast.  Stick with me, and I’ll convert you to loving breakfast too.     I know, I know… but in case you have missed my plug for whole wheat pastry flour, here it is on Amazon.  I’ve also seen it at Winco and Target.   Print Blueberry Waffles Ingredients 2 cups whole wheat pastry flour 1 cup quick oats 2 Tbs flaxseed meal 2 Tbs chia seeds 2 tsp aluminum-free baking powder 2 and 1/4 cups vanilla almond or coconut milk 1 cup fresh or...

Valentine’s Day is all about my loves… my husband, two beautiful children, and food.  Let’s put a pause on all the red dyes and hard candies and spoil ourselves (oh… and our special someone too) with a gorgeous, satisfying, and I-can’t-stop-myself-from-eating breakfast.  I made a couple batches of these Raspberry Waffles, ya know, just to make sure they taste as good the tenth time as they did the first.  Spoil alert: They did.       Okay, let me talk about my food crushes.  I absolutely ADORE fresh fruit and breakfast foods.  I’ve been known to flirt with muffins behind my waffle’s back, but my new Belgian waffle iron has only magnified my infatuation with waffles.  I just use some olive oil in my Misto Olive Oil Sprayer and pour on some of my favorite batters like my Multigrain Waffles or my Banana Waffles.   I usually double my batch and refrigerate the leftovers just so I can make fresh waffles for a few mornings in a row.     I have discovered a few must have ingredients in order to make waffles, muffins, and other baked goods light and fluffy while sneaking in some solid nutrients.  The first is whole wheat pastry flour.   It prevents your whole wheat items from turning into dense bricks!  It has all the benefits of whole wheat, but keeps everything light and fluffy.  Also, you must invest in a bag of Flaxseed Meal and Chia Seeds.  They are power grains packed with protein, fiber, and Omega-3s and you won’t even be able to taste them!  Like I said, I’m all about sneaking health into tasty things and...

 I can’t be the only one searching for a variety of healthy, quick, and filling breakfast options, right?  I’ve created several fast, easy, and yummy-in-my-tummy breakfast options such as my Banana Apple Oatmeal Smoothie, Multigrain Waffles, and my Creamy Oatmeal.  LOVE them!  However, this morning I wanted to experiment with something a little different.  Overnight Oats in a Jar are quickly made the night prior (seriously in like 5 minutes or less) and refrigerated overnight.  Slice some fresh berries on top and ta-da!  Your breakfast is ready.     Don’t over look breakfast anymore!  Especially not when amazingly scrumptious options like this is available.  Go ahead and hit your snooze one more time because your breakfast will be ready and waiting whenever you decide to wake and arise.   Oh, did I also mention my Breakfast Quiches.  They can also be waiting in the refrigerator for you.  Bake some prior and they make an incredible quick, healthy, and filling breakfast.  See?!?!  There is no reason to skip on nutrition or taste for breakfast.  These sweet, satisfying, and creamy Overnight Oats are just waiting for you to devour!  They’re also pretty tasty topped with banana or apple slices.       Chia Seeds are these tiny little power houses full of incredible benefits.
