Whether you have kids or not, these Ants on a Log are an easy, tasty, quick, and nutritious little snack.  Crunchy celery topped with creamy peanut butter and juicy grapes and/or raisins?  Oh, I’m in love with these little critters.   I love fruit and vegetables!  Okay, I may be a little addicted to fruit and vegetables.  They have such bright and vibrant colors and a variety of flavors and textures.  Ants on a Log are a perfect option when either hosting a party, getting a snack for the kids, or just needing something sweet and juicy.   When purchasing celery or grapes, organic is best.  They have such thin skin that they absorb pesticides and chemicals.  Definitely purchase organic if possible.  Regardless, you need to wash those bad boys.   Don’t know the value of washing your fruits and vegetables? Thanksgiving dinner wouldn’t be complete without stuffing.  However, traditional stuffing seemed a little boring to me this year.  I always think of  YOU before creating a new recipe because I want you to be healthy AND enjoy the food you eat.   Well, you’re probably tired of me professing my love for fresh fruits and vegetables.  I can’t help myself!  If juicy, crisp apples are perfect in my Creamy Apple Oatmeal, why wouldn’t they be fabulous in stuffing?  Throw in some crunchy celery, herbs and savory breakfast sausage… and WALLAH!  Fluffy stuffing with apple sausage that might steal the spotlight of your main dish this Thanksgiving.   Print Apple Sausage Stuffing Ingredients 1 Tbs coconut or olive oil 1 cup chopped celery 1 cup chopped onions 2 1/2 cups unsalted organic chicken stock 1/4 cup dried parsley 1 tsp thyme 1/2 tsp salt 1/2 tsp pepper 12 ounces toasted whole wheat bread cubes 1 lb chicken or turkey breakfast sausage browned 3 cups finely chopped apple Olive oil cooking spray Instructions In a large pot over medium heat, add oil and heat for 1 minute. Add celery and onion. Cook until onion is translucent about 3 to 4 minutes. Add chicken stock, parsley, thyme, salt and pepper. Bring to boil. Meanwhile, brown sausage and chop apple. Once stock mixture is boiling, add bread crumbs and stir well. Add browned sausage and apples and mix well. Lightly spray 11 x 7 baking dish with olive oil cooking spray. Scoop stuffing in baking dish and spray lightly with cooking spray. Bake stuffing at 350° for 30 minutes or until top is golden brown....

Print Shrimp Stuffed Yellow Squash I love 'stuffed' vegetables! This new creation will be added to Quinoa and Tomato Stuffed Bell Peppers and Stuffed Zucchini as one of my veggie packed favorites! Ingredients 4 medium yellow summer squash 1 squash per person 1 Tbs coconut oil or olive oil 1 small sweet onion chopped 2 medium celery ribs chopped 1 green bell pepper chopped 2 tsp minced garlic 1 lb raw shrimp peeled and chopped 1 cup whole wheat breadcrumbs 1/4 cup parsley 1/2 tsp salt 1/2 tsp black pepper 1/4 tsp red pepper flakes optional Instructions Preheat oven to 375. Wash squash and trim off the ends. Cut them lengthwise down the center and carefully scoop out pulp from center. Place on baking sheet with centers facing up. Meanwhile, in a medium size skillet, heat oil. Add onion, celery, bell pepper, and garlic. Saute for 2 to 3 minutes until slightly tender. Remove from heat. In a medium bowl, combine shrimp, breadcrumbs, parsley, salt, pepper, and red pepper. Mix well. Add vegetable mixture and mix well. Scope shrimp mixture into the center of each squash. Print Manly Steak Soup Ingredients 1 tsp Olive or Coconut Oil 2 medium ribs of celery chopped 4 medium carrots peeled and cut into 1/2 inch pieces 1 small onion chopped 1 medium green bell pepper diced 2 tsp minced garlic 32 oz organic beef broth or stock low sodium 15 oz organic vegetable broth low sodium 1.5 tsp dried thyme 1 tsp black pepper 4 large red potatoes cut into cubes 1 lb sirloin steak all visible fat discarded and cut into 1 inch pieces 2 Tbs steak sauce lowest sodium available Instructions In large pot, heat oil over medium heat.
