Who knew you could substitute heavy whipping cream and butter in alfredo sauce with cauliflower?  When I mentioned it to one of my friends, she emphatically told me not to try it because she made a cauliflower alfredo recipe from Pinterest and it failed miserably.  Her husband made her promise, swear, and crosse-her-heart to never try it again.  Well, you know how I love a challenge.   I’ve had a couple recipe fails too.  The sauce wasn’t creamy enough or too thick or not flavorful enough.  However with a little tweaking and determination, by George I think she’s got it! When the weather is cold, it’s time to whip out the comfort food.  Creamy, cheesy, and flavorful soups always hit the spot for me.  AND isn’t it a must that potatoes be involved?  Well, you’re going to fall head-over-heels for this Creamy Potato Soup that I originally shared on Pretty Providence.  Can I let you in on a little secret?  It’s healthy too!  Your eyes might be surprised at some of the ingredients, but your mouth will thank you for making it.     Many people think ‘coconut milk‘ is some exotic ingredient, BUT you’ll find it right next to regular milk in the grocery dairy section.  It’s high is GOOD fats and a great substitute for heavy whipping cream.  It also does not taste ‘coconuty’.  It’s really rich and creamy and you won’t be able to tell a difference.  Trust me, I’m looking out for your tastebuds and health!   PrintCreamy Potato Soup Ingredients32 oz natural or organic chicken broth 1 medium sweet onion, diced 4 large potatoes, peeled and diced 1 head of cauliflower, washed and cut into florets 1 cup original coconut milk 3 cups shredded Colby Jack cheese 1 tsp salt 1 tsp black pepperInstructionsIn a large pot, bring chicken broth to boil. Nurses sometimes forget what is and isn’t appropriate to talk about while eating.  At work, we can talk easily about all sorts of gruesome and disgusting details while enjoying our lunch.  However, I’ve learned my morbid and nasty stories are not as welcomed in normal dining circumstances.  Shocking, right?   So, I’m going to let you peacefully eat these creamy mashed potatoes with your eyes before I talk with you about something a little uncomfortable and unpleasant.  You’ll want to keep reading because ‘it’ starts shortly after birth at a 3% rate,  exceeds 50% by the age 50, and reaches over 90% by the age 80. Mashed Potatoes with Cauliflower

I tried numerous of times to make mashed potatoes with cauliflower.  One time, it turned out like a soup.  AND then one time, it was really chunky.  After my many fails, I was about to give up on trying until I FINALLY figured it out!  The texture turned out perfect.  Try them out and let me know what you think! PrintMashed Potatoes with Cauliflower Ingredients1 head of cauliflower, cut into florets and washed well 3 large red potatoes, washed well and cut into chunks 1 cup coconut milk 1 Tbs fresh parsley 1 Tbs oregano 1 tsp fresh or dried rosemary 1/2 tsp salt 1/2 tsp black pepper 1/2 cup fresh grated Parmesan cheese (optional)InstructionsIn a large skillet, bring cauliflower florets and 1 cup coconut milk to a boil. Cover, reduce heat, and simmer for about 15 minutes until tender. In a large pot, bring about 4 cups of water to boil. Add potato chunks and boil for about 15 minutes until tender.
